Production Process
- Sourcing: High-altitude agave matures for several years to develop maximum sugar content and mineral complexity.
- Cooking & Distillation: The agaves are slow-roasted for three days in traditional brick ovens before undergoing small-batch double distillation.
- Aging: The liquid is aged in select American oak barrels, consisting of a unique blend of Avión's finest Añejo with a touch of Extra Añejo.
- Filtration: A meticulous double charcoal filtration process removes the amber color imparted by the barrels, revealing a transparent spirit while leaving the complex wood flavors intact
